Tomato, Pesto, Mozzarella Stacks


This is a simple appetizer that is sure to impress with it’s colorful beauty. Juicy heirlooms and fresh basil is a winning combination – here’s an idea for a subtle twist on the typical Caprese.

Serves 4
 

 

Ingredients

  • 3 large ripe heirloom tomatoes, sliced in rounds
  • 4 oz fresh mozzarella, sliced in rounds
  • 1 bunch fresh basil
  • 1/4 cup raw pine nuts
  • 1/2 cup olive oil
  • 2 tablespoons balsamic vinegar
  • salt & pepper


Preparation

  1. In a food processor, combine basil, pine nuts and olive oil and pulse until well blended.
  2. Place first layer of tomatoes on serving dish and top with mozzarella slices.
  3. Drizzle pesto sauce over tomatoes and mozzarella and then close the stack with another slice of tomato.
  4. Drizzle with balsamic and sprinkle with salt & pepper and serve.
