Sauteed Cabbage & Apples
This is a simple veggie side inspired by a Swedish restaurant in San Anselmo that my mom used to take me to back in the ’80′s. They served it over egg noodles, but I love the combination of ingredients, even sans pasta. So here it goes…
Serves 4
Ingredients
- 1 head red cabbage, shredded
- 1 yellow onion, chopped
- 2 crisp apples, sliced (I use Gala, but Golden Delicious would work well too)
- 1/4 cup poppy seeds
- 2 tablespoons coconut oil
- salt & pepper
Preparation
- Melt the coconut oil and saute the onions until tender.
- Add cabbage and season with salt & pepper.
- Stir and saute for about another 10 minutes.
- Toss in apples and let soften.
- Add poppy seeds before serving.
