Red Bean Nut Dip


This dip is easy to make and is surprisingly different from normal hummus.

 

Ingredients

  • 1 cup red beans, soaked overnight and cooked
  • 1/2 cup walnuts, soaked overnight
  • 1/2 cup pecans, soaked overnight
  • 8 cloves garlic
  • 4 tablespoons olive oil
  • salt & pepper


Brown the garlic cloves in a pan with olive oil. Set aside and let cool. In a food processor, combine beans, nuts, garlic, salt & pepper and remaining olive oil. Puree for a couple of minutes until smooth. Makes for a hearty dip that pairs well with plantain chips.
