Raw Coconut-Carrot Macaroons

Another raw recipe coming at you! I love playing around with combinations of healthful raw ingredients and creating a satisfying sweet(ish) treat. These coconut carrot macaroons allow you to get some veggies into your diet without even realizing it.
Makes 24
Ingredients
- 4 large carrots, peeled chopped
- 1 cup shredded coconut
- 1 cup raw almonds, soaked overnight and drained
- 6 large dates, pitted and soaked in warm water for about 30 minutes
- 2 – 4 tablespoons coconut oil
Preparation
- Throw all ingredients in the food processor and puree for about a minute, until carrots are fully shredded and distributed evenly.
- Scoop and roll into 1 inch balls.
- Place on dehydrator sheets and set to 115 degrees for about 8 hours. (if you like them more chewy, you may choose to take out after 6 hours or so)
