Mediterranean Roast Chicken Salad

Next time you roast a chicken for dinner, why not make a second and turn it into a scrumptious salad for your lunches or a picnic dish?
Serves 6
Ingredients
- 1 roasted chicken, meat pulled off
- 1 cup cherry tomatoes, cut in half
- 1 cup crisp green olives, pits removed and sliced (I like the Cerignola variety)
- 3/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- salt & pepper
Preparation
- Pull all of the meat off the chicken and place in a large mixing bowl.
- Add tomatoes and olives and toss, then add feta and toss again lightly.
- Drizzle with olive oil and sprinkle with salt & pepper.
