Cabbage Tomato Salad

Another quick veggie fix: this time with red cabbage and cherry tomatoes, plus a couple extra flavorful ingredients. Crisp with both sweet and salty. Makes for an excellent easy side that pairs especially well with poultry.
Serves 4
Ingredients
- 1/2 head red cabbage, shredded
- 2 cups cherry tomatoes, halved
- 4 oz whole milk mozzarella, cubed
- 4 tablespoons olive oil
- 1/4 cup pine nuts, toasted lightly
- salt & pepper
Preparation
- With cabbage in a large salad bowl, drizzle with olive oil and sprinkle with salt & pepper.
- Toss well, then add tomatoes and mozzarella and toss again.
- Sprinkle pine nuts over the top and serve.
