Buffalo Stuffed Mushrooms

 


With ground buffalo from a local butcher and a few other basic ingredients, you can prepare this meaty appetizer for guests. Meat and mushrooms get a kick from any combination of spices and other ingredients you decide to throw in.

Serves 6

 

Ingredients

  • 1 lb ground buffalo
  • ~4 cups button mushrooms, stems removed
  • 1 golden delicious apple, chopped
  • 1/2 cup raw walnuts, chopped
  • 1 egg
  • salt & pepper


Preparation

  1. Combine buffalo, apples, walnuts, egg and salt & pepper and mix well.
  2. Lay mushrooms upside-down on a baking sheet.
  3. Spoon meat mixture into each cap.
  4. Bake at 325 for 15 minutes or until lightly browned and cooked through.
