Brussel Sprout Salad w/ Pecans & Lemon Zest


Brussel sprouts may not be your favorite vegetable. I enjoy their earthy flavor, but even if you don’t, with these accompaniments, you’ll be surprised how much it’s transformed. Here’s to more tasty ways to get your greens!

Serves 4

 

Ingredients

  • 2 pounds brussel sprouts, trimmed and blanched
  • 1 cup raw pecans, coarsely chopped
  • zest of 4 Meyer lemons
  • 1/4 cup olive oil
  • salt & pepper


Preparation

  1. Cut each brussel sprout in half, them slice in thin sections, from top to core.
  2. Throw into a salad bowl and drizzle with olive oil and sprinkle with salt & pepper.
  3. Zest lemons into the bowl and toss salad thoroughly.
  4. Add pecans and toss again.
